Sausage potato bake

I am a potato girl. I will eat them any way I can get them. Mom says it’s the Irish in me, I just say that potatoes are delicious. Both of us are right. 😉

Also, I have to apologize in advance, since I don’t really measure anything I cook. If it looks like it will feed all of us, that’s how much I use. Since I do the cooking for the whole family, I just kind of got used to doing all the measuring in my head.

We’ve been eating this dish since I was a kid and mom probably since she was a kid. It’s great for feeding a hungry bunch after working in the field all day, and it’s quick and easy.

You need just a few things.

Your favorite mashed potato recipe, already cooked

5 Smoked Sausages, cooked and cut into bite size pieces

Your favorite cheese to top the casserole with (We use cheese slices, and cover the top!)

Place the sausage in the bottom of a 9″ x 13″ pan. Spread the potatoes on top and then place the cheese on top of the potatoes.

Bake in a 350 degree oven just until the cheese is melted and bubbly.
