Swiss Steak

My mom used to make a version of this when I was growing up. She used to use diced tomatoes (not from a can!) and tomato juice. I cheat and use the canned tomatoes, mostly because I hate chopping tomatoes.

Aprox 16 servings

2 2/3 lbs Ground beef

2/3 tbsp Salt

1/3 lb Flour

2/3 tbsp Pepper

4 cups Tomatoes, diced with juice (canned)

2/3 tbsp Garlic

1/3 cup diced Onion

1/3 cup Green Peppers

2/3 oz Cornstarch

2/3 oz Olive oil

Portion Patties. Dip patties into flour seasoned with salt and pepper. Arrange patties on sheet pan and bake at 350* for 10-12 minutes, drain. Or fry in skillet on stove.

While patties are cooking, sauté onions, peppers and garlic in oil. Add diced tomatoes and simmer. Add cornstarch to thicken if needed.

Transfer patties to pans and cover with tomato sauce, bake an additional 10 minutes.
