I have been on a doughnut (donut? Nope too close to do not.) kick for months now! I go to the gas station, I get a doughnut, I go to the store, I grab a pack of doughnuts. Is there a Doughnut God, because I really feel like he’s calling my name.
I decided if I;m going to eat the damn things, I should just make them myself. So, I did. And they were gone in about 10 minutes. These have just enough moistness in them from the sour cream, that it was perfect. I hate dry doughnuts! It’s kind of like eating paste. Blech.
1 c Flour 1 egg
1/2 c sugar 6 T. sour cream
1/2 t. baking soda 1/4 c milk
1/4 c cocoa powder 1/4 c oil
1/2 teaspoon vanilla extract
Preheat oven to 375. In small bowl, combine vanilla, egg, sour cream, oil and milk. In large bowl, combine the flour, sugar, cocoa and baking soda. Combine by adding the wet ingredients to the dry (small bowl to the large). Grease a doughnut pan and fill about 2/3 full. If you don’t have a doughnut pan, you can use a greased muffin pan and have doughnut holes instead.
Bake 8-10 minutes or until toothpick inserted in center comes out clean.
Now, you can eat these just like this. They are delicious, especially warm. Orrrrrr…just bear with me here. Or, you could drizzle a glaze over the top of them. Something like maybe a pumpkin glaze? Yeah, that just totally pushed this over the top for me. I love pumpkin…mmmm pumpkin.
For the glaze
1 c powdered sugar 3 T milk
1/2 t Vanilla 1/4 t pumpkin pie spice (this is more or less to taste)
Mix all the ingredients in a small bowl. Spoon your icing over the top, lightly. Or spread it over thickly, do it your way, I’m not your boss. But any way you do it, you’ll be sure to enjoy them!
