Kangaroo Burgers

Did you know that kangaroo has 25 grams of protein and 0 fat. That’s awesome! It also makes it hard to hold together when you are trying to grill it…or bake it or you know do anything with it.

So for the 4th, we had thr traditional burgers and dogs on the grill. But we had just come home from Sprouts’ grand opening sale in Lawrence, and we had picked up some kangaroo meat. Just to try something different. If you don’t think about how cute they are, it’s really not that hard to eat it.

We made it meatloaf style, so really you could just use your faorite recipe for that. But if you don’t have one, you can use mine. I’ll share….for now. 😉

1 lb of ground kangaroo meat
1 egg
about 1/2 cup of beer (any kind, can also use any type of liquid), you might not use it all. I just pour it out of the bottle so I can drink the rest.
about 6 crackers (you can also use bread crumbs), crushed
Salt and pepper plus any other seasonings you use….I use a ton!
you can also use some kind of tomato type of sauce for topping. I didn’t and don’t on my meatloaf either.
To add some fat to the meat, you can use a couple of tablespoons of bacon grease

Mix all ingredients in a large bowl. Shape into patties. This made 4 pretty good size burgers. Grill em over your favorite method of grilling. We made sure that they were all the way done.

They tasted kind of like salmon patties, with a weird after taste. They weren’t bad, but I wouldn’t eat it on a regular basis….of course if I did, I’d probably be used to the taste…..
